These processed data (FTIR spectroscopy, solid-state NMR spectroscopy) were used to generate the manuscript entitled: Assessing the Quantification of Acetylation in Konjac Glucomannan via ATR-FTIR and Solid-state NMR Spectroscopy. This dataset contains the data for all the FTIR and NMR spectra shown in this manuscript and its supplementary material.
