Dr. Arua (Kingsley) Kalu is an Associate Food Science and Nutrition lecturer at the School of Science, Western Sydney University (WSU), Australia. Before joining WSU, he was a casual lecturer at UNSW, Sydney, Australia, where he completed his PhD. He has several years of teaching experience in the Department of Food Technology, The Federal Polytechnic, Offa, Nigeria. In the past, he has also worked with Australia's George's Institute for Global Health FoodSwitch Programme as a Data Analyst/Consultant and with Coca-Cola Hellenic Bottling Company in Nigeria. Kingsley received prestigious awards from Africa (Tertiary Education Award), UNSW, the American Nutrition Society, and the Council for Responsible Nutrition, and was previously a nominee for the Prestigious Schmidt Science Fellowship. He received his Bachelor's degree in Food Science & Technology and Master's in Public Health (Human Nutrition) from Abia State University and the University of Ibadan, Nigeria. Also, he completed a Postgraduate Certification in Nutrition Epidemiology with Harvard University (EdX online) in collaboration with the Institute of Human Virology, Nigeria. He has published his research outputs in top-tier peer-reviewed Nutrition journals and has presented his work at various international conferences. Also, he is a reviewer for a number of Nutrition Journals and an editorial board member for both America and Australia Nutrition Societies. He was recently nominated as Vice President II, AOAC International (South Pacific West Group) and serves as the honorary secretary for Nutrition Society Australia. His research focus includes exploring the role of diet in eye and cognitive health, bioavailability studies, and food & Nutrition security and underutilized legumes. He currently supervises Masters and PhD students in his field.
