Dr Sunil Panchal is a Senior Lecturer in Nutrition and Food Science at Western Sydney University, Australia. He has a strong academic and research background in nutritional biochemistry and functional foods, with a focus on the role of diet and bioactive compounds in the prevention and management of chronic diseases, including obesity, diabetes and cardiovascular disease.
In addition to his work in metabolic health, Dr Panchal has developed an active research profile in sustainable food systems, particularly in the area of food waste recycling and valorisation. His research explores innovative approaches to converting agricultural and food industry by-products into value-added functional ingredients, contributing to both improved human health and environmental sustainability. This work aligns with global efforts to reduce food waste and supports the development of circular economy practices within the agri-food sector.
Dr Panchal has contributed extensively to teaching and curriculum development in nutrition and food science, supporting the education of future health and science professionals. His research integrates laboratory, preclinical and applied approaches to better understand how dietary components and sustainable food practices influence health outcomes.
