Investigating environmental sustainability education in undergraduate hospitality management curricula within New South Wales (NSW), Australia

Abstract

Environmental Sustainability Education (ESE) can equip graduates with the essential knowledge and skills about global challenges. Integration of ESE within undergraduate curriculum with both conceptual and practical approaches will maximise the learning potential of students and grow their awareness toward sustainability. Given the importance of sustainable practices and knowledge in a consumption rich industry like hospitality, this study will examine the Australian undergraduate Bachelor Hospitality Management programs offered in institutions located in NSW, to describe the extent of ESE integration within the curricula. Through applying a mixed methodology approach, the study will include three stages of data collection and analysis. The first stage will involve content analysis of the programs followed by semi-structured interviews with hospitality academics. The third stage will be surveying industry practitioners. The study will fill the gap in knowledge by identifying the position of ESE within hospitality management curricula and the extent of ESE integration.
