The analysis of dependence for three ways data tables with ordinal variables in food industry evaluation

    Abstract

    ![CDATA[In the sensory characteristics evaluation framework, of particular interest is the study of dependance and the role of ordinal categorical variables. In some recent articles (Beh et al., 2005; Simonetti, 2003; D'Ambra et al.,2005) great emphasis has been given to the partition of the Goodman-Kruskal tau using orthogonal polynomial (Emerson, 1968). These articles describe the study of non-symmetrical relationships for three ways contingency tables. In this paper, we introduce a partition of an index for the measure of the dependency (Marcotorchino, 1985) for three ways contingency tables. The application of this partition is made for the sensory appraisal of an Italian made mozzarella cheese.]]
