Abstract

![CDATA[This paper develops a generic model of food supply chain cost function (GFSCC) for the transportation of fresh food products from farm to retailer. Taking into account the degradation in quality of food products through temperature and transport time, the model seeks to optimize total cost by maintaining the quality of food products above an acceptable level during the transportation. It uses a range of food products with different quality degradation rates, at different initial quality levels and from multiple farms and considers the transportation cost, cooling cost and devalued cost of food products due to reduced quality. The application of the proposed model is illustrated using different fresh food transportation scenarios.]]
