Vanilla, produced by a climbing orchid (Vanilla planifolia Andrews) native to tropical regions of Mexico is the world's most popular flavouring compound and is used in the food, pharmaceutical and cosmetic industries. The commercial product is obtained from cured, dried beans produced annually on vines. Natural vanilla has a fruity, floral fragrance combined with deep aromas that make it a unique and universal flavouring. It also has considerable potential as a food preservative. The annual world consumption of dried, cured vanilla beans is approximately 2,200 tonnes and demand is increasing by at least 5% per annum. Currently, Australia imports all of its vanilla except for some hobby farm production in North Queensland. Experience in Australia has shown that it is feasible to grow vanilla in protective shade houses that provide more controlled growing conditions. The aim of this project was to conduct research that will provide the basis for the commercial production of cured vanilla beans that have a high vanillin content and superior overall quality that will attract premium prices for Australian growers.
